Oregon Oyster Festival

Oregon Oyster Festival is a community-forward celebration of Oregon oysters, coastal food culture, and responsible ocean stewardship hosted at Pal’s Hayden Island. Expect a full weekend of ticketed events, including:

  • Oregon Oyster Festival Faire: the core tasting experience across our indoor space + covered waterfront deck, with eight stations, oyster farms shucking and talking harvest, a grilling station, chef grilled-oyster moments, plus beverage samples and family-friendly activities.

  • Oyster 101 Class with Oyster Master (L2) Lauren McCool (Hama Hama Oysters): shucking fundamentals, guided tastings, handling + hosting tips.

  • Ford’s Gin Oyster + Cocktail Pairing Class (21+) with Sean Hoard + Ford’s Gin ambassador: hands-on martini builds and oyster pairings.

  • Guest Chef Collaboration Dinner: one-night, limited-seat oyster dinner with Chef Jorge Luis Hernandez (Isidore, San Antonio) + Pal’s Chef Conrado Gonzalez (Feb 28, 6:30pm, 40 seats).

Portland Dining Month

We’re participating in Portland Dining Month with a $35, 3-course menu featuring Oregon coast flavors and Pal’s favorites. Choose your path each course:

  • Course 1: Oregon bay shrimp hushpuppies or organic greens with shaved horseradish

  • Course 2: Penn Cove mussel pasta with crab butter or smoked Hama Hama oyster chowder with house sourdough

  • Course 3: Vegan chocolate mousse and vanilla ice cream
